(Columbus, MS) ā Jubilations Cheesecakes has been informed by Amtrak that its handmade cheesecakes will be featured on all New Orleans to Chicago and New Orleans to New York trains, and several other Amtrak trains at various times, beginning in May, 2002.
The courtship of Jubilations and Amtrak started in 1997 when four flavors were served on The Crescent line from New York to New Orleans. Since that time, Jubilations worked with Jack Davis, Director of Amtrakės Food and Beverage Service, to place the cheesecakes on more of the route system. Those years of hard work paid off when Jubilations learned that its Original Cheesecake Supreme, Mississippi Mud, and Key Lime cheesecakes will be served on much of Amtrakės route system beginning in May. Early projections estimate consumption on Amtrak lines at 10,000 slices per week.
Tammy Craddock, founder and president, began Jubilations Cheesecakes in the kitchen of her home in 1983. In 1990, Mrs. Craddock moved Jubilations to a production facility and has since received national acclaim for her divine cheesecakes. Despite the phenomenal growth and praise her cheesecakes have garnered, Mrs. Craddock hasnėt let this stop her from making each cheesecake by hand and making sure each batch meets her strict standards. Mrs. Craddockės enthusiasm was apparent when she said, æIt is a dream come true for me to have come from making four cheesecakes every other week for a local restaurant in my home kitchen to being served on Amtrak all over the U.S.A."

Mississippi won twice when Meridian Mayor, John Robert Smith, was announced as the new Chairman of the Board of Amtrak.
